Project Title: Nano-engineered dairy-based beverages with enhanced creaminess

The successful candidate will be responsible for the day-to-day running of the project from formulation, processing and initial structure/function analyses through to up-scaling and consumer testing of selected beverage products.

Duties & Responsibilities specific to this project:

- Develop experimental plan with project leader

- Source ingredients and produce lab and pilot scale beverages

- Characterise microstructure and texture of products

- Prepare samples for consumer testing

- Analyse and interpret results

- Disseminate results through popular and scientific publications

• PhD in Food Science or related discipline
• Relevant research experience not to exceed 3 years’ post-PhD
• Demonstrated research and technical expertise in dairy processing and food microstructure analysis
• Experienced in translating laboratory scale experimental testing to pilot plant and commercial scale dairy processing
• Evidence of research activity (publications, conference presentations, awards) and future scholarly output (working papers, research proposals etc)
• Excellent project management, analytical, report writing and data analysis skills
• An ability to collaborate with team members and PhD students to help build research knowledge and skill and to guide professional development
• Excellent communication skills (oral, written, presentation) with an ability to enable effective knowledge and technology transfer
• Ability to generate new ideas, unique concepts, models and solutions
